Spring

Hello all!

I haven’t written in ages!

All is well here, it is raining cats and dogs today. I can’t say I like it too much, but it is way WAY better than snow. I don’t normally mind the rain, but it is making me sleepy today…

The past two weeks were pleasant. I was in ambulatory internal medicine and had a wonderful schedule (ah, sleep is good). The office was about 40 minutes south from where I live. It was in farm land, and was absolutely beautiful! Everyday I would look out the window and see the peach trees progress in their blossom. All the fields were green, and… well, I loved it!

On Passover I went to Manhattan and saw mom and dad who came to visit me. It was wonderful. I wish I lived closer to home. The only thing I regret is that I didn’t bring food with me… that would have been nice. Instead we ate from the various Deli’s in the city. As both Dad and I had our birthdays coming up we celebrated there together. It was nice. Happy Birthday to Saba Tzvika also!

Cat food-- This week I decided to try and make the cats some homemade cat food. I used brown rice, ground turkey and some carrots and broccoli. KC loves it, and Vega tolerates it. I’ll finish this batch with them and probably go back to canned food, as it is easier and less time consuming. But, with the whole pet food scare, I thought I should try and make them some food—at least I know what goes into it. Sheesh.

Human food—I was craving some pasta, but didn’t want to make a heavy recipe. I used http://allrecipes.com/Recipe/Greek-Pasta-with-Tomatoes-and-White-Beans/Detail.aspx and found the following:

Greek pasta with Tomatoes and White beans

Ingredients:
-2 (14.5 oz) cans Italian-style diced tomatoes (I used plain ones with reduced sodium)
-1 (19 oz) can cannelloni beans, drained and rinsed
-10 oz fresh spinach, washed and chopped (I didn’t chop it and I think mine was 9oz)
-8 oz penne pasta (I used how ever much is in a normal size box)
-1/2 cup crumbled feta cheese (I added the cheese to my pasta serving right before I ate it and put about 2 teaspoons on mine)
-1 medium onion
-several garlic cloves

Directions:
-Cook the pasta in a large pot of boiling salted water until al dente.
-Meanwhile, sauté diced onion and minced garlic in olive oil, add tomatoes and beans. Bring to a boil over medium high heat. Reduce heat and simmer 10 minutes.
-Add Spinach to the sauce; cook for 2 minutes or until spinach wilts, stirring constantly
-Season as you wish
-Serve sauce over pasta and sprinkle with feta

YUM!

Quilt update: Tiger is almost done. I have 1 whisker to finish on it. Lion needs 6 whiskers. Tree needs to be completed (and I got to get some green thread, because mine is too dark), I’m adding a butterfly and a snail. That’s it, then after that, Just add a few finishing touches and I could bind it. It looks neat, it really does! I can’t wait to be done with it so I could post pictures.

I think that’s about it—I have two weeks left at internal medicine. It was a tough rotation, but I learned a lot during this rotation.
